Paleo Sangria

Paleo Sangria

Ingredients

  • 2 (750 mL) bottles dry red wine (Cabernet Sauvignon or Merlot)
  • 1 cup 100% agave Tequila
  • 1/4 cup organic blue agave
  • 1/4 cup orange liqueur
  • 1 pound strawberries, hulled and halved
  • 3 oranges, thinly sliced
  • 3 limes, thinly sliced
  • 2 lemons, thinly sliced
  • 2 cups fresh arugula
  • (optional) Club soda
Stir together wine, tequila, agave and orange liqueur in large pitcher.  Stir in the arugula, and use a wooden spoon to mull (crush) the arugula so that the flavor is released. Add strawberries, lime, lemon and orange to the wine mixture, and lightly mull the fruit to release juices.
Cover and refrigerate for anywhere from 2-24 hours

Paleo Spaghetti 



Ingredients (preferably all organic products)

1 yellow onion chopped
8 chopped mushrooms
2 large carrots chopped
3 Tablespoons of Garlic
2 Tablespoons of Pesto
3 Italian sausages (hot or mild)
1/2 lb of hamburger meat
29 oz of stewed (Italian recipe) tomatoes
6 oz of tomato paste
14 oz of tomato sauce
2 medium size zucchinis cut into julienne strips
2 medium size yellow squash cut into julienne strips
4 Tablespoons Extra virgin olive oil
1 Tablespoons Coconut oil

Tomato sauce Instructions

1. In a large pot, saute the carrots, onions, pesto and 2 Tablespoons of garlic in EVOO until tender.
2. Remove mixture and put into a bowl.
3. Over medium heat add hamburger and sausage. The sausage casing should by removed. It should be completely cooked and in small chunks. Remove any excess fat.
4. Add stewed tomatoes, tomato paste, and tomato sauce. Fill the pot with 14 oz of water. Add mushrooms and stir.
5. Let simmer for 4 to 5 hours, stir when needed. 

Zucchini and Squash Instructions

1. Heat coconut oil in a skillet over medium-high heat.
2. Place zucchini and 1 Tablespoon of garlic in skillet and heat until zucchini is slightly softened or to your liking.
